Guys. I started a new, exciting, challenging job. One where I am exhausted from by the time I get home, and one that also keeps my brain running even when I walk through the door. I want to spend every moment I can with my daughter (since my new commute is like twice as far as my old job). So I choose (currently, I could change my mind later) to not cook during the week. Or at least cook as minimally as possible.
So how am I feeding my family you ask?
COSTCO.
I didn’t know this before, but you can pick stuff up that is ready to cook. We’ve had quesadillas, wraps, rotisserie chicken (this is a good base to a bunch of different meal ideas). Usually I try to cook at least once a week, usually weekends, but I’ve got a baby shower committee I’m on, the little one is in gymnastics, and I had work travel (I’ve only been working 3 weeks!) So I literally haven’t gotten my life together yet. Bear with me!
