Leftover Breakfast Hash

Yummy breakfast made from leftovers and random ingredients in the house after Christmas!

Ingredients

  • 1 onion diced
  • 2 cups ham cubed
  • 1 cup corn kernals cooked
  • 3 cups seasoned curly fries/tator tots precooked
  • 1/4 cup grated parmesan
  • 6 eggs
  • 1/2 oz fresh basil leaves sliced in ribbons
  • 1/2 cup shredded cheddar
  • salt
  • black bepper
  • chipotle pepper flakes
  • olive oil

Instructions

  1. Preheat the oven to 425F.

  2. In a cast iron skillet, or any other oven safe skillet big enough to hold all the ingredients, heat 1 tablespoon of olive oil over medium-high heat. Once hot, saute onions until clear. Season lightly with salt, both peppers. 

  3. Add cubed ham. Stir together until well mixed and warm. 

  4. Stir in corn. Season again to your taste. 

  5. Mix in cooked potatoes (fries, tater tots, etc).

  6. Once well mixed, turn off heat and crack the eggs over the skillet. Sprinkle parmesan and additional salt and pepper over eggs. 

  7. Cover with cheddar and fresh basil ribbons.

  8. Place in the oven and bake until eggs are cooked the way you like it! Over medium is my favorite. 10-15 minutes.
